Thin foil: This type is typically found in the range of 9-15 microns (0.009-0.015 mm). Thin foil is typically considered a lightweight option that is designed for basic food wrapping, such as sandwiches/cheeses/left-overs, and therefore may be very easy to manipulate and tear, but it does not have enough strength for heavy-duty uses or repeated applications of extreme heat.
The common thickness for standard foil purchased for home use ranges between 16 and 18 microns (i.e., 0.016 mm to 0.018 mm). This thickness is ideal for everyday kitchen use because it provides the ideal balance between flexibility and durability. Standard foils can be used for many different purposes, such as baking cookies, wrapping vegetables, and lining baking sheets and pans for small to medium size.
The thickness of heavy-duty foil is in the range of 20 to 24 microns (i.e., 0.020 mm to 0.024 mm). The thicker foil is more appropriate for tougher applications; being thicker means that it has a much greater resistance to being torn or punctured during use. It is well-suited for cooking large cuts of meat on the grill, roasting large cuts of meat, and lining oven racks.
Extra Heavy Duty Foil is defined as foil thicker than 25 microns (or 0.025 mm). Extra heavy-duty foil is less frequently purchased for purely household use; however, it is often very popular with people who cook frequently at home, with food caterers, and with people who work in food processing businesses since it provides a very high level of durability compared to other thicknesses.
24 inch wide foil is typically only available in standard (16-18 microns) and heavy-duty (20-24 microns). The larger size foil provides a larger surface area to help reduce sagging and tearing while wrapping large items when using thicker gauges. Heavy-duty 24-inch foil is much more commonly used for commercial purposes or for large home use since it retains its integrity after being used to cover large roasting pans or wrap around whole turkeys.
When you need to cover a large area with aluminum foil, 24 inches wide is what works best. You can cook, bake and store food with 24-inch aluminum foil.
Cooking and Roasting:
When roasting large food items (such as a turkey, ham, or an entire roast), the 24-inch width of the aluminum foil allows you to wrap the item completely and preserve its moisture and flavor by creating a tighter seal than what would be achieved by layering two smaller pieces of foil. Therefore, the food will cook evenly.
Cooking on the Grill and Barbecuing:
Using 24-inch aluminum foil on the grill allows you to line the grill grates so that food will not stick to the grill top, and it also makes it easy to clean up afterward. Additionally, you can use 24-inch aluminum foil for en papillote cooking (i.e., sealing fish, vegetables or meat in a foil packet and steaming them on the grill) to keep as many nutrients and natural juices in the food as possible.
Oven Baking:
The 24-inch width makes it easy to cover large casserole dishes or sheet pans and protect them from spills and splatter. For example, if you are making a large lasagna or roasted vegetables, you can cover it halfway through the cooking process to prevent the top of the lasagna and roasted vegetables from burning.
Preserving Food
Refrigerate/Frozen - When food items are wrapped in 24" foil, they have a barrier from elements, such as moisture, odor, or air (refrigeration) for freshness and to prevent freezer burn when stored long-term in a freezer.
Meals Prepping/Portioning - Whether you're prepping meals or portioning meals, you can use a 24" x 24" sheet of foil to cut to customize what you want to wrap up (portion out). This will prevent any mixing of flavors.
Catering/Party Planning
Buffets & Parties - Keeping food hot and safe from germs by covering with 24" foil. The large width will provide a perfect covering for larger plates/dishes (great for large crowds at parties/potlucks).
Take-out and Delivery: 24-inch foil is used to pack up larger orders for small catering businesses or home caterers. It's a flexible, leak-proof way to wrap up your fried chicken, roasted veggies, or casseroles.
Cleaning & Organizing: The thick, wide sheets of foil can be used as drawer liners, shelving, and refrigerator bin liners. By trapping crumbs and spills, they allow you to clean these areas easily. In addition, you can use crumpled sheets of foil as a non-abrasive scrubbing pad for your pots and pans.
The width of aluminum foil plays a major role in how it will be used best for different purposes. Below is a detailed review comparing the three most common widths of aluminum foil for household use — 12 inches (30 cm), 18 inches (45 cm), and 24 inches (60.96 cm) — to assist you in choosing the one that suits your needs.
Whether roasting your turkey for Thanksgiving or freezing bulk meals, 24 inch foil provides you with exceptional coverage and convenience, particularly if using the appropriate thickness option for your application, the material also provides exceptional durability; however, heat transfer and food safety are maintained.
