Therefore, because it is inexpensive, they tend to use a lower number (15 microns) for this role. This allows smaller caterers and homes to use it without a lot of financial strain, as this type of foil is used frequently in homes or small catering sites. The other end of the scale is represented by the larger restaurants and catering companies in all three Asian countries; both of these types of catering companies generally use an 18 micron or 20 micron foil because they need a thicker foil for greater durability and strength, given that they cater to larger numbers of clients and work with larger pans/trays and a much larger quantity of foods.
In Southeast Asia, for instance, in countries like, Thailand, Vietnam, Malaysia, they typically use a foil width of between 12 and 15 microns for catering purposes because they are often used for wrapping smaller, portable sizes of foods that are sold by street vendors. In addition, catering foil is typically used for temporary storage and transport in these nations; therefore thinner materials are more practical in those areas as overall these nations are more focused on quick, fresh food.
