The difference between restaurant-grade aluminum foil and residential aluminum foil is not only in the weight of the foil, but also in the width and thickness. While residential aluminum foil can handle most applications with light duty usage, restaurant-grade aluminum foil must withstand the demands placed on it because of high use, the ability to sustain various cooking methods, and the manner in which it is handled. For this reason, the thickness and width of restaurant-grade aluminum foil is manufactured specifically for the commercial kitchen industry, with few variations in thickness and width depending on application purposes.
Restaurant foil thickness is approximately 14-25 micron (0.014mm - 0.025mm) and balanced to provide sufficient flexibility with the strength needed to hold together when placed on foods or on trays for baking. After gathering at different ranges like 14-20 microns will be used most often in daily service operations to wrap product, cover a food container, line a tray for baking, etc. Because of their flexibility, the these thicknesses (14-20) will be able to provide enough strength to withstand tearing while still being flexible enough to conform to the shape of any product, as well as produce a solid hold under the aforementioned conditions. For more intense cooking procedures such as grilling and roasting, thicker grades (20-25 microns) are typically more desirable for heavier or more watery items, as the added thickness allows for better structural integrity or heat resistance to resist distortion or breakage in those high heat conditions. There are some instances that lighter weight (10-14) grades are used for wrapping more delicate product; however, this is generally less common in commercial applications due to lower durability of the foil.
The restaurant aluminum foil widths are designed to be compatible with the commonly used commercial kitchen utensils and packaging requirements. The most common width of aluminum foil is the 450mm width as it is the most versatile, used as a baking pan liner for large pans, whole roast wrapping, covering bulk food, etc.; narrower widths (300mm-400mm) are suitable for small batch preparation of food items, wrapping individual portions, and being used in smaller cookware; wider widths (500mm-600mm) are used more often in large-scale catering services, central kitchens, or automated packaging; they are used to maximize efficiency by enabling a larger surface to be coated in one application, thereby reducing the amount of waste. Most of the manufacturers of restaurant aluminum foil also provide custom widths, with a tolerance of ±1mm, to meet the specific types of restaurant equipment and the processes utilized by that establishment.
