12-micron aluminum foil has an excellent balance of flexibility versus strength. There may be many different uses in the kitchen, as it is one of the more versatile options for aluminum foil.

Thickness differences
The thickness of 10mic would be considered the thinnest foil, the lightest weight foil, etc.; while 12mic is a medium thickness and 23mic is the thickest and heaviest foil.
Strength and Flexibility
10mic has a higher degree of flexibility combined with lower degree of strength than 12mic which has both an equal amount of strength and flexibility; whereas 23mic has a high degree of strength but a lower degree of flexibility when compared to either of the other two thicknesses.
